Sprouting seems to be all the rage these days from chia seeds to almonds and other grains, even legumes. It takes the spotlight in Lupa’s Kitchen Ray of Life and Morning Glory trail mixes that we’ve featured in our Whole Body Box this month. But just what exactly is it and why do you care?

Sprouting involves soaking the grain, seed, nut, or legume in water and leaving to sit anywhere from three to seven days. This process makes it easier for the body to absorb nutrients like iron, zinc and Vitamin C. The sprouting process breaks down the seed making it easier for your body to digest. In fact, people with sensitive guts should consider this method because oftentimes, it seems that people are less allergenic to sprouted seeds than non-sprouted. And, because there’s less starch in a sprouted grain, the amount of protein and fiber becomes higher giving sprouted grains a lower glycemic index.

There are definitely benefits to sprouting but the downside is that because the sprouting takes place in a warm, moist environment, bacteria can be an issue. The products we are featuring have been sprouted and then dehydrated at a low heat that helps to kill the bacteria and keeps the oils in the nuts from going rancid.

Sprouting is also something you can do at home. The best way to stay on the safe side with your homegrown sprouts is to steam or boil them in water until tender. If you try it out, let me know how it goes and I’ll add it to my list.
